Ive owned the bike from around 12,000 miles. It is now on 18,000 and I dont know when the valves have been set, I just know not in my ownership.

Does anyone have any tips on doing it? I've heard most use the 'JPaige method'. Which involves doing the adjuster screw all the way in and then unscrewing it a set amount of times, as the pitch in the thread and therefore the width of the gap can be accurately calculated based on that.
Ive also heard the adjuster screw is also a weird erected oblong shape so you need a special tool to adjust and hold it in place.

If anyone knows a trustworthy mechanic in the midlands I'm all ears. Another thing Ive heard is many mechanics will just listen for any odd noises and not even check the valves, but still charge you for it.

Hiya Kurt.     I can only go by my experience.   My bike is an 06, done about 19,500 miles.
Valves checked once in the early days, I have asked two separate trusted mechanics this.
One said he has checked a few, low stressed engine cruisers, and never needed to alter one of them. 
Another asked is there any unusual noise .. no /  does it start well every time .. yes /  do you change the oil regularly .. yes.    Then don't bother.   You will be paying for garage time for nothing.

I have a 2003 VS800GL Intruder with 36,000 miles and have adjusted the valves multiple times.  It is my least favorite task because I have to remove the seat and tank to get at the valve covers.  Also the rear carburetor needs to be moved a little to gain access.  Remove spark plugs to make engine easier to turn over.  You have to turn the crank to get the valves to top dead center.  Then getting a tiny feeler gauge to measure the clearances can also be tricky.  A service manual will explain the procedure.  It takes about six hours; that is why dealers charge so much to do it.  I have found some valves to have tightened themselves, so I loosened them a little.  Trial and error to get the correct clearance.  I think it is better to err on the side of looseness than have them too tight.  Loose valves are happy valves.
